Easy Turkey Meatloaf Recipe

This Easy Turkey Meatloaf Recipe is perfect for those days. Meatloaf has been a favorite meal of mine since childhood. So I get a satisfying meal that is light, flavorful and made with fresh
ingredients.
Meatloaf
2 Lbs Ground Turkey
1½ Cups Panko Bread Crumbs
2 Large Eggs
1/2 teaspoon Pepper
1 teaspoon Salt
1 teaspoon Garlic Powder
1/4 teaspoon Cumin
1 teaspoon Finely Chopped Flat Leaf Parsley
2 Tablespoons Olive Oil
1/2 Cup Unsweetened Silk Soymilk
Pea Puree
2 Cups Shelled English Peas
Pinch Salt/Pepper
1 Tablespoon Fresh Lemon Juice
1 Tablespoon Chopped Flat Leaf Parsley
3 Tablespoons Olive Oil
1/4 Cup Unsweetened Silk Soymilk
Meatloaf
2 Lbs Ground Turkey
1½ Cups Panko Bread Crumbs

2 Tablespoons Olive Oil
1/2 Cup Unsweetened Silk Soymilk
Pea Puree
2 Cups Shelled English Peas
Pinch Salt/Pepper
1 Tablespoon Fresh Lemon Juice
1 Tablespoon Chopped Flat Leaf Parsley
3 Tablespoons Olive Oil
1/4 Cup Unsweetened Silk Soymilk
Meatloaf
Preheat oven to 350°F
Combine all meatloaf ingredients in large bowl. Use your hands to mix.
Transfer meat mixture to a large bread loaf pan to form. Invert loaf pan onto roasting pan that has been lined with foil and sprayed with nonstick.
Bake meatloaf for 1 hour or until cooked through. Broil 2-3 minutes to brown top.
Pea Puree
Drop peas into salted and boiling water for 90 seconds. Drain and transfer to an ice bath for 2-3 minutes. Drain and set aside 1/2 cup peas.
Transfer the remaining 1½ cups peas to blender or food processor.
Add the remaining puree ingredients and blend until smooth.
Serve meatloaf topped with pea puree and whole peas.
